Refreshing Lavender Gelato (100% Plant Based. No ice cream maker needed).

Welcome to the most delicious Lavender Gelato, made from only just plants!

Easy to make and no ice-cream maker is needed, unless you have one and choose to use it.

Ingredients:

Please note: Organic or beyond is always my choice, and I hope it is yours, too. I refuse to have traces of toxic pesticides in my food, since even the smallest amounts of pesticides/herbicides can disrupt the endocrine system and cause multiple health conditions.

These days there are a lot of opinions on sweeteners. Which ones are good or bad and which ones are truly OK to use and healthy?

It depends upon your body's state of health. 

I have been in natural health science, research and development since the year of 1996. Through observing and testing many natural sweeteners through many methods, including the live blood cell analysis and testing, always comparing my findings with many peer reviewed studies of good science (science without vested interests or hidden monopoly agendas), I have narrowed down the acceptable sweeteners for those that are in search of health, but even then I use them in moderation. I will not go into deep details here, but if I have listed a sweetener it means that it has gone through many years of my own testing, and I do approve it, regardless of the jungle of confusions and opinions in the outer world, which I will not go into here.  With this being said, that does not mean that I recommend it for you particularly, because I do not know your exact health state (in certain health conditions you would not want to use any additional sweeteners for a certain time), so you will need to make your own decision. I also want to point out that even though I eat and recommend 100% plant based diet for optimum health and well being, I do make an exception for Honey that has been harvested through the method that never kills any bees, and where it is also shared with the bees in a balanced way, while they are never fed any sugar. Such is the Honey that we produce on our ARP Tech Research Beyond Organic Farm, and I find it to be the most healing Honey, ever. Our Bees love to visit us daily when outside in the fields, as they are grateful for the care that goes into our relationship. 

So below you can make a choice here between these three sweeteners below or use whatever works for you:

A) 1/3 Cup Maple Syrup (this will add a bit of Maple flavor to it, and you may like that addition). 

OR

B) 1/3 Cup Raw Agave Nectar (it will not add any flavor to it and you will only get the Lavender flavor).

OR

C) 1/4 teaspoon of our YES! Organic Stevia (coming soon). This will add sweetness and its own flavor.

Plus:

3) 1/4 teaspoon of Himalayan Salt.

4) 1 Tablespoon of YES! ThickItUsed to thicken the mix and make it creamy. It's made of Certified Organic Rice Starch, Certified Organic Acacia Gum Powder and Certified Organic Arrowroot Powder.

Alternatively, you can use 3 Tablespoons of cooked and cooled rolled oats instead, and it will work well to add creaminess and act as a thickener, too.

5) 2-3 Sprigs of Lavender Flowers or 1 teaspoon of Lavender Flower Powder, or 1 Tablespoon of loose Lavender Flowers.

6) 1 teaspoon Grass Crystals (this is a must and so amazing added to any nut milks or any dairy substitute because it adds extra nutrients and that mild grassy milk flavor that you do not get from any plant based milks. I use it for most of my plant cheese base, and it is one of my go to for extra flavor and nutrients that resemble that authentic dairy taste).

Step #1:

Take your thawed out YES! Coconut Cream out of the fridge and stir it so that the separated particles are incorporated again. The YES! Coconut Cream does not have any emulsifiers or gums in it so you need to stir it prior to measuring out the amount for this recipe. 

Stir it well before you take out 3 measuring cups out and place it in a pot to warm it up to slightly warm temperature.

Once slightly warm, place in your blender and add 2-3 sprigs of Lavender Flowers (equal to 1 teaspoon of Lavender Flower Powder), and blend on high for 30 seconds.

Now strain this Lavender Infused Cream through the tightly woven strainer, or nut milk bag.

Now add all the other Ingredients from the list and blend on high for 10 seconds.

Step #2: 

Now transfer this creamy sauce into the pot and heat on medium high until it boils and thickens, by stirring constantly, for approximately 3 minutes.

Take off heat and let it cool. 

(Optional) Super Nutrition Power Additions:

Now if you choose you can add other Nutritional enhancers into this mix to make your ice cream, a super power. Good and mild tasting options are our 16 Strain Probiotics , 1/8 tsp, or Silica Concentrate Powder, and a couple of drops of Golden Ray Liquid Light Concentrate to make it Alive with Life Force). 

Step #3:

Once cooled you can now transfer the mix into an ice cube tray. I like to use food grade silicon kind since it is easier to pop out. If you don't have any ice trays, just spread in a shallow pan. Let it freeze for at least 8 hours.

OR 

If you do have an ice cream maker, then you can refrigerate the mix and then once ready pour into your ice cream maker.

Step #4:

If you have used a shallow pan, you can cut out small pieces before you move into below steps. 

Now pop the frozen mix out of ice cube tray and place in a blender.

Blend on high for 40 seconds until smooth. Do not over blend, since that would heat the mix.

Make sure you use the blender plunger to push the contents in for fast results.

 Take out and serve!
